Grilled Peach & Burrata Salad – Sweet & Savory Perfection!

Ingredients
  

4 ripe peaches, halved and pitted

2 tablespoons olive oil, plus more for drizzling

1 teaspoon honey

Salt and freshly ground black pepper, to taste

4 cups mixed arugula and baby spinach

8 oz burrata cheese, broken into pieces

1/4 cup walnuts, toasted

1/4 cup balsamic glaze

Fresh basil leaves, for garnishing

Instructions
 

Preheat the Grill: Heat your grill or grill pan over medium-high heat.

    Prepare the Peaches: In a bowl, toss the peach halves with olive oil, a drizzle of honey, and a pinch of salt and pepper to taste.

      Grill the Peaches: Once the grill is hot, place the peaches cut-side down on the grill. Grill them for about 3-4 minutes, or until char marks appear and they have softened slightly. Flip the peaches and grill for an additional 2-3 minutes. Remove from the grill and set aside.

        Toast the Walnuts: In a small pan over medium heat, toast the walnuts for 3-5 minutes until fragrant. Be careful not to burn them. Remove from the heat and set aside.

          Assemble the Salad: On a large serving platter, arrange the arugula and spinach. Scatter the grilled peach halves over the greens. Arrange pieces of burrata on top and sprinkle the toasted walnuts evenly throughout.

            Drizzle and Garnish: Drizzle the salad with balsamic glaze and a light drizzle of olive oil. Garnish with fresh basil leaves.

              Serve: Serve immediately, allowing the warmth of the grilled peaches to slightly melt the burrata, creating a wonderfully creamy texture with each bite.
