Grilled Peach Chicken with Balsamic Drizzle

4 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper, to taste

1/4 cup balsamic vinegar

2 tablespoons honey

Fresh basil leaves, for garnish

Instructions
 

Prepare the Marinade: In a small bowl, whisk together olive oil, garlic powder, onion powder, thyme, salt, and pepper. Reserve a tablespoon of the mixture for the peaches.

    Marinate the Chicken: Place the chicken breasts in a sealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Marinate for at least 30 minutes (or up to 4 hours in the fridge).

      Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Brush the chicken with the reserved marinade during cooking for extra flavor.

        Grill the Peaches: While the chicken is grilling, brush the cut sides of the peach halves with the remaining marinade. Place the peaches on the grill, cut side down. Grill for about 4-5 minutes, or until they have nice grill marks and are slightly softened.

          Make the Balsamic Drizzle: In a small saucepan over medium heat, combine the balsamic vinegar and honey. Bring to a simmer and cook for about 5 minutes, or until the mixture has thickened slightly. Remove from heat and let it cool to thicken further.

            Serve: Once cooked, remove the chicken and peaches from the grill. Slice the chicken and arrange on a serving platter. Top with grilled peach halves and drizzle the balsamic reduction over the top. Garnish with fresh basil leaves.
