Grilled Peach Salad

Ingredients
  

4 ripe peaches, halved and pitted

4 cups mixed greens (arugula, spinach, and kale)

1 cup goat cheese, crumbled

½ cup walnuts, roughly chopped

¼ cup balsamic glaze

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Preheat the Grill: Heat your grill to medium-high. If using a grill pan, heat it on the stove over medium-high heat.

    Prepare the Peaches: Brush the cut side of each peach half lightly with olive oil. Season with a pinch of salt and pepper for an enhanced flavor.

      Grill the Peaches: Place the peaches cut side down on the grill. Grill for about 3-5 minutes until grill marks appear and the peaches are slightly softened. Flip them over and grill for an additional 1-2 minutes to warm through.

        Mix the Salad Base: In a large mixing bowl, toss the mixed greens with the remaining olive oil, a pinch of salt, and pepper to coat evenly.

          Assemble the Salad: Arrange the dressed greens on a large platter. Top with the grilled peach halves, crumbled goat cheese, and chopped walnuts.
