Ingredients

4 ripe peaches, halved and pitted

2 tablespoons olive oil

1 teaspoon cinnamon

1/4 cup honey (plus extra for drizzling)

1 cup Greek yogurt (plain or vanilla)

1/4 teaspoon vanilla extract (if using plain yogurt)

Fresh mint leaves for garnish

Pinch of salt

Instructions

Prep the Peaches: Start by washing the peaches thoroughly. Cut them in half and carefully remove the pits. Brush the cut sides of each peach half with olive oil to prevent sticking and enhance flavor.

Mix Honey and Cinnamon: In a small bowl, combine the honey with the cinnamon. This mixture will add an aromatic sweetness to the peaches when grilled.

Grill the Peaches: Preheat your grill to medium heat. Place the peach halves cut side down on the grill. Grill for about 4-5 minutes until grill marks appear and the peaches soften slightly. Flip them over and brush the cut side with the honey-cinnamon mixture. Grill for an additional 2-3 minutes.

Prepare Yogurt Mixture: While the peaches are grilling, if you are using plain Greek yogurt, mix it in a bowl with the vanilla extract to add sweetness and flavor. If you have vanilla yogurt, you can skip this step.

Assemble the Dish: Once the peaches are grilled, remove them from the grill and place them on a serving platter. Dollop a generous spoonful of the yogurt on top of each peach half.

Drizzle and Garnish: Drizzle a little extra honey over the yogurt and peaches for added sweetness. Sprinkle a pinch of salt to enhance the flavors and garnish with fresh mint leaves for a refreshing touch.

Serve: Enjoy your grilled peaches warm for dessert or a delightful breakfast treat!
