Grilled Pineapple Turkey Burgers

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped red onion

1/4 cup diced fresh pineapple (plus more for grilling)

1 clove garlic, minced

1 tbsp soy sauce

1 tsp fresh ginger, grated

1/2 tsp salt

1/4 tsp black pepper

1 tsp olive oil (for grilling)

4 whole wheat burger buns

4 slices of cheese (Pepper Jack or Cheddar recommended)

Lettuce leaves, for serving

Slices of tomato, for serving

BBQ sauce, for drizzling

Instructions
 

Prepare the Turkey Mixture: In a large bowl, combine the ground turkey, breadcrumbs, red onion, diced pineapple, minced garlic, soy sauce, grated ginger, salt, and black pepper. Mix until all ingredients are evenly incorporated, but be careful not to overmix, as this can make the burgers tough.

    Form the Patties: Divide the turkey mixture into 4 equal portions and shape them into patties about 1/2 inch thick. Use your thumb to make a small indent in the center of each patty; this helps them cook evenly and prevents them from puffing up.

      Preheat the Grill: Preheat your grill to medium-high heat. If you’re using a grill pan, heat it over medium-high heat. Lightly brush the grill grates or pan with olive oil to prevent sticking.

        Grill the Burgers: Place the turkey patties on the grill and cook for about 5-6 minutes on one side. Flip the patties and place a slice of cheese on each. Grill for an additional 5-6 minutes or until the internal temperature reaches 165°F (74°C).

          Grill the Pineapple: While the turkey burgers are grilling, slice the remaining pineapple into rings (about 1/2 inch thick). Add the pineapple rings to the grill for about 2-3 minutes on each side, or until you see grill marks and the pineapple becomes caramelized.

            Assemble the Burgers: Toast the whole wheat burger buns on the grill for a minute or two until lightly golden. Place a lettuce leaf and slice of tomato on the bottom half of each bun. Add the grilled turkey patty with melted cheese on top, followed by a grilled pineapple ring. Drizzle with BBQ sauce and finish with the top half of the bun.

              Serve: Serve the grilled pineapple turkey burgers immediately with your favorite sides, such as sweet potato fries or a fresh salad.
