Grilled Shrimp Tacos

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

Juice and zest of 1 lime

Juice and zest of 1 orange

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon salt

¼ teaspoon black pepper

8 small corn or flour tortillas

1 cup shredded cabbage (green or purple)

½ cup fresh cilantro, chopped

1 avocado, sliced

½ cup salsa or pico de gallo

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a mixing bowl, combine the shrimp, olive oil, minced garlic, lime juice, lime zest, orange juice, orange zest, smoked paprika, cumin, salt, and black pepper. Toss until shrimp are evenly coated. cover and let marinate in the fridge for about 20-30 minutes.

    Prepare the Grill: Preheat your grill or grill pan to medium-high heat. If using outdoor grill, ensure it’s clean and lightly oiled.

      Grill the Shrimp: Once the grill is ready, thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand). Place the skewers on the grill, cooking for about 2-3 minutes on each side or until the shrimp are pink and opaque. Avoid overcooking to maintain tenderness.

        Warm the Tortillas: While the shrimp is grilling, slightly warm the tortillas on the grill for about 30 seconds on each side or until they are soft and pliable.

          Assemble the Tacos: Once the shrimp are ready, remove them from the skewers. Place a handful of shredded cabbage on each tortilla, followed by a few shrimp, sliced avocado, and a sprinkle of fresh cilantro.

            Top and Serve: Add a spoonful of salsa or pico de gallo on top of each taco. Serve with lime wedges on the side for an extra zing.
