1 cup hummus (store-bought or homemade)

1 medium zucchini, sliced into rounds

1 red bell pepper, sliced

1 small eggplant, sliced into rounds

1 cup fresh spinach or arugula

4 slices of whole-grain bread or your choice

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Balsamic glaze (optional, for drizzling)

Prepare the veggies: In a large mixing bowl, combine the sliced zucchini, red bell pepper, and eggplant. Drizzle with olive oil and season with garlic powder, smoked paprika, salt, and pepper. Toss until the vegetables are evenly coated.

    Grill the vegetables: Preheat a grill or a grill pan over medium-high heat. Place the seasoned veggies on the grill and cook for about 4-5 minutes per side, or until they are tender and have nice grill marks. Remove from the grill and set aside.
