Grilled Veggie Skewers

Ingredients
  

1 zucchini, sliced into thick rounds

1 bell pepper (red, yellow, or orange), cut into 1-inch squares

1 red onion, cut into 1-inch wedges

1 cup cherry tomatoes

1 cup mushrooms (button or cremini), cleaned and left whole

2 tablespoons olive oil

1 tablespoon balsamic vinegar

2 teaspoons garlic powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Skewers (wooden or metal, soak wooden skewers in water for 30 minutes if using)

Instructions
 

Prep the Vegetables: In a large mixing bowl, combine the zucchini, bell pepper, red onion, cherry tomatoes, and mushrooms.

    Make the Marinade: In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, dried oregano, smoked paprika, salt, and pepper.

      Marinate the Veggies: Pour the marinade over the vegetables in the mixing bowl and toss until all the pieces are well coated. Let the vegetables marinate for at least 20 minutes to absorb the flavors.

        Skewer the Veggies: Preheat your grill to medium heat. Thread the marinated vegetables onto the skewers, alternating types for variety and color.

          Grill the Skewers: Place the veggie skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
