2 large ripe bananas, mashed

1 ½ cups rolled oats

½ cup unsweetened almond butter (or any nut butter of choice)

¼ cup honey or maple syrup

½ teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup dark chocolate chips (optional)

¼ cup chopped nuts (walnuts or pecans, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir well until smooth and fully combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, baking powder, ground cinnamon, and salt.

        Combine Mixtures: Gradually add the dry mixture into the wet mixture, stirring until just combined. If included, fold in the dark chocolate chips and chopped nuts.

          Scoop the Cookies: Using a spoon or cookie scoop, drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart as they will spread slightly.
