Ingredients

1 cup whole wheat flour

1/2 cup oats (rolled or quick)

1/4 cup almond flour

1/3 cup coconut sugar (or sweetener of choice)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup unsweetened applesauce

1/4 cup almond milk (or any milk of choice)

1/4 cup Greek yogurt (or dairy-free yogurt)

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

Optional: 1 teaspoon lemon zest for added flavor

Instructions

Preheat your oven: Begin by preheating your oven to 350°F (175°C) and lining a muffin tin with paper liners or lightly greasing it.

Combine dry ingredients: In a large mixing bowl, whisk together the whole wheat flour, oats, almond flour, coconut sugar, baking powder, baking soda, and sea salt until well combined.

Mix wet ingredients: In a separate bowl, mix the applesauce, almond milk, Greek yogurt, vanilla extract, and lemon zest (if using). Stir until smooth and well blended.

Combine mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; be careful not to overmix.

Fold in blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

Fill muffin tins: Using a spoon or ice cream scoop, fill each muffin cup about 3/4 of the way full.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Cool and enjoy: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes. Then, transfer them to a wire rack to cool completely.

Serve: Enjoy these guilt-free blueberry muffins as a breakfast treat or a healthy snack throughout your day!
