1 cup cooked ham, diced

1 medium onion, finely chopped

1 red bell pepper, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

Salt and pepper, to taste

1 tablespoon olive oil

2 tablespoons unsalted butter

4 large eggs

Fresh parsley, chopped (for garnish)

Instructions
 

Parboil the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and red bell pepper. Sauté for about 5 minutes until softened.
