4 large flour tortillas

6 large eggs

1 cup cooked ham, diced

1 cup shredded cheddar cheese

1/2 cup salsa (your choice of mild, medium, or hot)

1/4 cup milk

1 tablespoon olive oil

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, black pepper, and garlic powder until well combined. Set aside.

    Cook the Ham: Heat the olive oil in a large skillet over medium heat. Add the diced ham and sauté for about 2-3 minutes until heated through. Remove the ham from the skillet and set it aside.

      Scramble the Eggs: In the same skillet, pour in the egg mixture and cook, stirring occasionally, until just set but still slightly creamy (about 5-7 minutes). Remove from heat and gently fold in the cooked ham and shredded cheddar cheese until cheese melts slightly.

        Assemble the Rollups: Lay a tortilla flat on a clean surface. Spoon a portion of the ham and egg mixture onto the center of the tortilla. Add a generous spoonful of salsa on top.

          Roll the Tortilla: Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.

            Toast the Rollups (Optional): If desired, return the skillet to medium heat. Place the rollups seam-side down in the skillet. Cook for 2-3 minutes on each side, or until golden brown and slightly crispy.

              Serve: Slice each rollup in half and arrange on a serving platter. Garnish with fresh cilantro (if using) and a dollop of sour cream on the side.
