Ingredients

24 oz frozen hash browns (thawed)

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup diced onion

1/2 cup melted butter

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 cup crushed cornflakes (optional topping)

2 tablespoons olive oil (optional for the topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Mix Ingredients: In a large mixing bowl, combine the thawed hash browns, sour cream, cream of chicken soup, diced onion, garlic powder, onion powder, black pepper, and salt. Stir until well combined.

Add Cheese: Gently fold in the shredded sharp cheddar cheese and mozzarella cheese into the hash brown mixture. Make sure everything is evenly distributed.

Prepare Baking Dish: Grease a 9x13 inch baking dish with a bit of butter or cooking spray to prevent sticking.

Transfer Mixture: Spoon the hash brown mixture evenly into the prepared baking dish. Spread it out into an even layer.

Melt Butter and Cornflake Topping: If you’re using cornflakes, mix the crushed cornflakes with melted butter and olive oil in a small bowl until well coated. This will create a crispy topping.

Add Topping: Sprinkle the cornflake mixture evenly over the top of the hash brown mixture (if using). If not using, simply proceed without this step.

Bake: Place the casserole in the preheated oven and bake for 45-55 minutes, or until the top is golden brown and the casserole is bubbling around the edges.

Cool and Serve: Once baked, remove from the oven and let it cool for about 10 minutes. Slice and serve warm, pairing it perfectly with eggs, breakfast meats, or as a side dish for dinner.
