1 lb ground turkey

1 cup hatch green chiles, diced (roasted for extra flavor)

1/2 cup onion, finely chopped

1/2 cup bell pepper, diced (any color)

4 large eggs

1/4 cup milk

1 tsp garlic powder

1 tsp cumin

Salt and pepper, to taste

4 large whole wheat or spinach tortillas

1 cup shredded cheddar cheese

1 avocado, sliced

Fresh cilantro for garnish

Salsa or hot sauce, for serving

Prepare the Filling: In a large skillet over medium heat, add the ground turkey. Cook for about 5 minutes until it begins to brown, breaking it apart with a spatula.

    Add Vegetables: Stir in the chopped onion and bell pepper. Sauté for another 3-4 minutes, until the vegetables are softened.

      Season: Mix in the diced hatch green chiles, garlic powder, cumin, salt, and pepper. Cook for an additional 2 minutes to blend the flavors. Remove from skillet and set aside.

        Scramble Eggs: In a bowl, whisk together the eggs and milk until combined. In the same skillet, pour the egg mixture and cook over medium-low heat. Stir gently until the eggs are fluffy and fully cooked, about 3-4 minutes.

          Combine: Add the turkey and vegetable mixture to the scrambled eggs, stirring gently until evenly mixed.

            Assemble Wraps: Lay a tortilla flat and spoon about 1 cup of the turkey-egg filling onto the center. Sprinkle a handful of shredded cheddar cheese on top, then add a few slices of avocado.
