1 (8.5 oz) box of cornbread mix

1 cup of milk

2 large eggs

1 cup canned cream-style corn

1 cup shredded cheddar cheese (divided)

1 (4 oz) can of diced Hatch green chiles (drained)

1/2 cup finely chopped onion

1/2 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup sour cream

Fresh cilantro for garnish (optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare the Baking Dish: Grease a 9x13 inch baking dish with cooking spray or butter.

      Mix Wet Ingredients: In a large mixing bowl, whisk together the milk and eggs until combined.

        Combine Corn and Cheese: Add the cream-style corn, sour cream, 1/2 cup of shredded cheddar cheese, and diced Hatch green chiles to the bowl. Stir until everything is well mixed.

          Incorporate Dry Ingredients: In a separate bowl, combine the cornbread mix, chopped onion, garlic powder, cumin, baking powder, salt, and black pepper. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined.
