6 large eggs

1 cup spinach, chopped

1/2 cup bell pepper, diced (any color)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/2 cup shredded low-fat cheese (cheddar or mozzarella)

1/4 tsp black pepper

1/4 tsp salt

1/2 tsp garlic powder

Optional: Fresh herbs (such as parsley or basil) for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Muffin Pan: Grease a 12-cup muffin tin with cooking spray or use silicone muffin liners for easy removal.

      Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk well until fully combined.

        Add Vegetables and Seasonings: Stir in the chopped spinach, diced bell pepper, halved cherry tomatoes, red onion, black pepper, salt, and garlic powder into the egg mixture. Mix until all the ingredients are evenly incorporated.

          Add Cheese: Gently fold in the shredded cheese, ensuring it is distributed throughout the mixture.

            Pour into Muffin Tin: Divide the egg mixture evenly among the muffin cups, filling each about 3/4 full.

              Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the egg muffins are set and lightly golden on top. A toothpick inserted into the center should come out clean.
