1 ½ cups whole wheat flour

½ cup rolled oats

1 tsp baking soda

1 tsp baking powder

1 tsp ground cinnamon

¼ tsp salt

½ cup coconut sugar (or brown sugar)

1 large egg

½ cup unsweetened applesauce

½ cup Greek yogurt (plain)

¼ cup honey or maple syrup

1 tsp vanilla extract

1 ½ cups diced apples (about 2 medium apples)

½ cup walnuts or pecans (optional, chopped)

Cooking spray or muffin liners

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners or spray with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, rolled oats, baking soda, baking powder, ground cinnamon, and salt.

      Combine Wet Ingredients: In another bowl, combine the coconut sugar and egg. Beat until well mixed, then add the applesauce, Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until smooth and well incorporated.

        Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix. Gently fold in the diced apples and nuts if using.
