Ingredients

1 cup Medjool dates, pitted

1 cup raw almonds (or any nut of your choice)

1/2 cup unsweetened cocoa powder

1/4 cup nut butter (almond or peanut butter work great)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup shredded coconut (for rolling)

Optional: 1-2 tablespoons maple syrup or honey (for extra sweetness, if desired)

Instructions

Prep the Ingredients: Begin by placing the pitted Medjool dates into a food processor. Ensure they are soft and sticky; if they seem a bit dry, soak them in warm water for 10 minutes and then drain.

Blend the Base: Add the raw almonds to the food processor with the dates. Pulse until the mixture becomes crumbly but starts to hold together when pressed. You might need to scrape down the sides a couple of times.

Incorporate Flavors: Add the unsweetened cocoa powder, nut butter, vanilla extract, sea salt, and optional sweetener (maple syrup or honey). Blend again until a smooth, sticky dough forms. If the mixture is too crumbly, you can add a teaspoon of water or more nut butter to help it combine.

Shape the Balls: With clean hands, take a tablespoon of the mixture and roll it into a ball shape (about 1 inch in diameter). Continue until all the mixture is used up.

Coat the Balls: Roll each ball in shredded coconut to give it a nice finish. Ensure they're evenly coated for an extra touch of flavor.

Chill: Place the chocolate date balls on a plate and refrigerate for at least 30 minutes to firm up.

Serve and Enjoy: Take them out and enjoy as a healthy snack or dessert. Store any leftovers in an airtight container in the fridge for up to one week.
