2 large cucumbers (preferably Japanese or English)

1 tablespoon salt

1 tablespoon rice vinegar

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon sesame oil

1 tablespoon honey or maple syrup (for a vegan option)

1 teaspoon grated ginger

1 clove garlic, minced

1 tablespoon toasted sesame seeds

2 green onions, chopped

A handful of fresh cilantro or mint leaves for garnish (optional)

Prepare the cucumbers: Wash the cucumbers thoroughly. Slice them thinly using a knife or mandoline. If you prefer a softer texture, lightly salt the cucumber slices in a bowl and let them sit for about 10-15 minutes. This process will draw out excess moisture.

    Make the dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, and minced garlic until well combined. Adjust the sweetness or acidity to your taste.

      Combine the salad: After the cucumbers have released excess water (if salted), rinse them briefly under cold water and pat dry with a towel. Place the cucumbers in a large mixing bowl. Pour the dressing over the cucumbers and toss to coat evenly.
