Healthy Pumpkin Oatmeal Bars

Ingredients
  

1 cup rolled oats

1/2 cup pumpkin puree (canned or fresh)

1/4 cup honey or maple syrup

1/4 cup almond milk (or any plant-based milk)

1/4 cup almond butter (or peanut butter)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans)

1/2 cup dried fruits (raisins or cranberries)

Optional: 1/4 cup dark chocolate chips or pumpkin seeds for topping

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, letting it hang over the sides for easy removal.

    In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, baking powder, and salt. Mix well to evenly distribute the dry ingredients.

      In another bowl, whisk together the pumpkin puree, honey (or maple syrup), almond milk, almond butter, and vanilla extract until smooth and creamy.

        Pour the wet ingredients into the dry mixture and stir until combined. Fold in the chopped nuts and dried fruits. If using, sprinkle in dark chocolate chips or pumpkin seeds for added texture and flavor.

          Spread the batter evenly into the prepared baking pan, smoothing out the top with a spatula. You can use a wet spatula to prevent sticking.

            Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Remove from the oven and allow the bars to cool in the pan for about 10 minutes. Then, lift the parchment paper to transfer them to a wire rack to cool completely before slicing.

                Cut into bars or squares, and enjoy! Store any leftovers in an airtight container in the refrigerator for up to a week.
