Ingredients

1 cup almond milk (or any plant-based milk of your choice)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey if not vegan)

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and diced (plus extra for garnish)

A pinch of sea salt

Optional toppings: shredded coconut, sliced almonds, or fresh mint leaves

Instructions

In a medium-sized bowl, whisk together the almond milk, maple syrup, vanilla extract, and sea salt until thoroughly combined.

Gradually stir in the chia seeds, ensuring they are evenly distributed throughout the mixture.

Add the diced strawberries into the mixture, gently folding them in. This will infuse the pudding with a lovely strawberry flavor.

Cover the bowl with plastic wrap or transfer the mixture to an airtight container, and refrigerate for at least 4 hours or overnight. This will allow the chia seeds to expand and create a pudding-like consistency.

Once ready, give the mixture a good stir to break up any clumps of chia seeds, and adjust sweetness if necessary.

Serve the chia pudding in individual bowls or jars, and top with extra strawberries, shredded coconut, sliced almonds, and fresh mint leaves for a delicious finish.
