Ingredients

1 cup green or brown lentils, rinsed

2 cups vegetable broth

1 medium yellow onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder (adjust for heat preference)

1 cup barbecue sauce (homemade or store-bought)

Salt and pepper to taste

4 whole wheat burger buns

Fresh parsley or cilantro, chopped (for garnish)

Instructions

Prepare the lentils: In a medium saucepan, combine rinsed lentils and vegetable broth. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for about 20-25 minutes, or until lentils are tender. Drain any excess liquid if necessary.

Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5-7 minutes until softened. Stir in the minced garlic and cook for an additional minute.

Combine and season: Add the cooked lentils to the skillet with the sautéed vegetables. Sprinkle in the smoked paprika, cumin, chili powder, salt, and pepper. Mix well to combine.

Add barbecue sauce: Pour in the barbecue sauce and stir until everything is well-coated. Allow the mixture to simmer on low heat for about 5 minutes, letting the flavors meld together.

Toast the buns: While the lentil mixture simmers, you can lightly toast the whole wheat burger buns in a toaster or on a skillet until golden.

Assemble the Sloppy Joes: Spoon generous amounts of the BBQ lentil mixture onto the toasted buns.

Garnish and serve: Top with fresh parsley or cilantro for a pop of color and added freshness. Serve with a side of sweet potato fries or a green salad.
