Ingredients

2 lbs ground beef (preferably 80/20 for flavor)

1 large onion, diced

3 cloves garlic, minced

2 cups diced bell peppers (red and green)

2 cans (15 oz each) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 can (6 oz) tomato paste

2 cups beef broth

3 tbsp chili powder

1 tbsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

2 tbsp olive oil

1 tbsp Worcestershire sauce

1 cup corn (fresh or frozen)

Optional toppings: shredded cheese, sour cream, chopped green onions, avocado

Instructions

Prepare Ingredients: Begin by preparing all the vegetables. Dice the onion and bell peppers, and mince the garlic. Drain and rinse the canned beans.

Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

Sauté Vegetables: Add the diced onion, garlic, and bell peppers to the pot with the browned beef. Sauté for about 5 minutes until the vegetables are tender and fragrant.

Spice It Up: Stir in the chili powder, cumin, smoked paprika, cayenne pepper, and season with salt and pepper. Cook for an additional minute to toast the spices.

Combine Ingredients: Add the crushed tomatoes, tomato paste, beef broth, Worcestershire sauce, kidney beans, black beans, and corn. Stir everything well to combine.

Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for at least 30-45 minutes, stirring occasionally. The longer it simmers, the better the flavors meld together.

Final Touches: Taste and adjust seasoning if necessary. If you prefer a thicker chili, let it simmer uncovered for an additional 10-15 minutes.

Serve: Ladle the chili into bowls and top with your choice of shredded cheese, sour cream, chopped green onions, or avocado for added richness.
