1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1 medium onion, diced

2 carrots, sliced

2 stalks celery, diced

4 cups beef broth

1 can (14 oz) diced tomatoes

2 potatoes, cubed

1 teaspoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Make the Meatballs: In a large bowl, combine ground meat, breadcrumbs, Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until just combined. Form into 1-inch meatballs and set aside.

    Brown the Meatballs: In a large pot or Dutch oven, heat olive oil over medium heat. Add meatballs in batches, browning them on all sides, about 5-7 minutes. Remove and set aside.

      Sauté the Vegetables: In the same pot, add the onion, carrots, and celery. Sauté for about 5 minutes until softened.

        Add Broth and Tomatoes: Pour in the beef broth and canned tomatoes. Stir to combine and bring to a simmer.

          Combine and Cook: Return the browned meatballs to the pot along with the cubed potatoes and Worcestershire sauce. Stir well, cover, and let the stew simmer for about 30-35 minutes, or until the potatoes are tender and the flavors meld.

            Adjust Seasoning and Serve: Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with fresh parsley.
