Ingredients

2 tablespoons olive oil

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon red pepper flakes (optional, for heat)

6 cups vegetable broth (or chicken broth for non-vegetarian option)

2 cans (15 ounces each) cannellini beans, rinsed and drained

1 can (14 ounces) diced tomatoes (with juices)

2 cups fresh kale, chopped (or spinach)

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped for garnish

Grated Parmesan cheese (optional, for serving)

Instructions

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and the onion is translucent.

Add Aromatics: Stir in the minced garlic, dried thyme, dried rosemary, and red pepper flakes (if using). Cook for another minute until fragrant.

Build the Soup Base: Pour in the vegetable broth, then add the rinsed cannellini beans and diced tomatoes with their juices. Stir well to combine, bring the mixture to a boil.

Simmer the Soup: Once boiling, reduce the heat to low and let the soup simmer uncovered for about 20-25 minutes, allowing the flavors to meld. Stir occasionally.

Incorporate the Greens: After simmering, add the chopped kale (or spinach) and cook for an additional 5 minutes, until the greens are wilted and tender.

Season and Finish: Season the soup with salt and pepper to taste. Stir in the lemon juice for brightness and mix well.

Serve: Ladle the soup into bowls, garnishing each with a sprinkle of freshly chopped parsley and a dash of grated Parmesan cheese if desired.
