Hobo Casserole with Ground Beef & Potatoes – Quick & Delicious!

1 lb ground beef

4 medium potatoes, thinly sliced

1 medium onion, diced

1 cup corn (frozen or canned)

1 cup green beans (fresh or canned)

1 can (15 oz) diced tomatoes, drained

2 cups shredded cheddar cheese

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Optional: Fresh parsley for garnish

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and sauté until browned. Break it apart with a spatula while cooking. Drain excess fat if necessary.

      Add Vegetables: Add the diced onion to the skillet and cook for another 3-4 minutes until it becomes translucent. Stir in the garlic powder, oregano, salt, and pepper. Mix well.

        Layer the Casserole: In a greased 9x13-inch baking dish, layer half of the sliced potatoes at the bottom. Spread half of the ground beef mixture over the potatoes. Add a layer of corn and green beans, followed by half of the diced tomatoes. Repeat the layers with the remaining ingredients: another layer of potatoes, ground beef, corn, green beans, and finish with the rest of the tomatoes.

          Cheese It Up: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

            Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

              Uncover and Finish: After 45 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Once out of the oven, let the casserole rest for 5-10 minutes. Optionally, garnish with fresh parsley before serving.
