Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup brown sugar, packed

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

1 large egg

½ cup unsalted butter, melted and slightly cooled

1 cup buttermilk (or milk + 1 tbsp vinegar)

1 tsp vanilla extract

2 cups fresh blueberries (or 1 ½ cups frozen blueberries, thawed and drained)

Zest of 1 lemon (optional, for extra flavor)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Combine Wet Ingredients: In a separate bowl, whisk the egg until well beaten. Add the melted butter, buttermilk, vanilla extract, and lemon zest (if using). Mix until everything is incorporated.

Combine the Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; some lumps are okay.

Fold in Blueberries: Gently fold the blueberries into the muffin batter, taking care to not crush them.

Fill Muffin Tin: Using a scoop or spoon, divide the batter evenly among the prepared muffin cups, filling each about ¾ full.

Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Let the muffins cool in the pan for about 5 minutes, then remove them and transfer to a wire rack to cool completely.

Enjoy: Serve warm or at room temperature, and revel in the soft, bursting flavor of your homemade blueberry muffins!
