Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk, chilled

1 tablespoon honey (optional for a touch of sweetness)

Extra flour for dusting

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

Combine Wet and Dry Ingredients: Make a well in the center of the flour mixture. Pour in the chilled buttermilk and honey (if using). Stir gently with a spatula just until the dough comes together. Do not overmix; the dough should be slightly sticky.

Knead and Roll: Turn the dough out onto a floured surface. Lightly knead the dough 3-4 times, just until it forms a cohesive ball. Then, pat it down into a 1-inch thick rectangle.

Cut the Biscuits: Using a floured biscuit cutter, cut out biscuits and place them on the prepared baking sheet. You can gather and re-roll the scraps, but do this gently to avoid overworking the dough.

Bake: Bake in the preheated oven for 12-15 minutes, or until golden brown on top.

Cool and Serve: Remove the biscuits from the oven and let them cool slightly. Serve warm with butter, jam, or your favorite gravy. Enjoy!
