1 cup granulated sugar

1/4 cup unsalted butter

1/4 cup light corn syrup

1/2 teaspoon salt

1/4 teaspoon baking soda

1 teaspoon vanilla extract

Optional: 1 cup chopped nuts (such as pecans or almonds) or 1/2 teaspoon cinnamon for extra flavor

Instructions
 

Pop the Popcorn:

    - Start by popping the popcorn kernels using an air popper or on the stovetop with a little bit of oil. Once popped, place the popcorn in a large mixing bowl. Make sure to remove any unpopped kernels.

      Prepare the Caramel Sauce:

        - In a medium-sized saucepan over medium heat, combine the granulated sugar, unsalted butter, light corn syrup, and salt. Stir the mixture continuously until it comes to a boil.

          - Allow the mixture to boil without stirring for about 4-5 minutes. You want it to turn a nice golden color.

            Add Flavorings:

              - Once the caramel achieves a lovely golden hue, remove it from the heat and carefully stir in the baking soda and vanilla extract. Be cautious as the mixture will bubble up dramatically. If using cinnamon or nuts, add them now as well.

                Coat the Popcorn:
