1 lb chicken breast, sliced into strips

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz mushrooms, sliced

1 teaspoon paprika

½ teaspoon dried thyme

Salt and pepper, to taste

1 cup chicken broth

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 cup sour cream

2 tablespoons fresh parsley, chopped (for garnish)

8 oz egg noodles or rice, cooked (for serving)

Instructions
 

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken breast and season with salt and pepper. Cook until golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Cook the Veggies: In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes. Add the sliced mushrooms and cook until they are softened, approximately 5 minutes.

      Add Seasonings: Stir in the paprika, thyme, and a pinch of salt and pepper. Mix well to combine.
