1 large egg, at room temperature

1 tablespoon Dijon mustard

1 tablespoon white vinegar or lemon juice

1 cup neutral oil (like canola or grapeseed)

1/2 teaspoon fine sea salt

Optional: 1/2 teaspoon garlic powder or fresh minced garlic for extra flavor

Instructions
 

Prepare Your Tools: Gather a tall container (like a mason jar) and an immersion blender. This recipe is quick and easy with this tool, but if you don’t have one, you can use a whisk or a processor (instructions below).

    Combine Ingredients: Crack the egg into the bottom of your container. Add the Dijon mustard, white vinegar (or lemon juice), and salt. If you're using garlic powder or fresh garlic, add it now too.

      Add the Oil: Pour the neutral oil over the egg mixture. Do not stir; it’s important that the oil sits on top of the egg mixture.

        Blend Away: Place the immersion blender all the way to the bottom of the container, covering the egg with the blender. Start blending on high speed without moving the blender for about 10-15 seconds. You’ll see a creamy emulsion start to form at the bottom.

          Lift and Move: Slowly lift the blender while continuing to blend. Move it up and down gently until all the oil is emulsified and incorporated into the mayonnaise. This should take about 30 seconds total.

            Taste and Adjust: Once the mayonnaise reaches your desired consistency, taste it, and add more salt, lemon juice, or garlic as desired. Blend again briefly to mix.

              Store: Transfer your homemade mayonnaise to a clean jar with a tight-fitting lid. Store in the refrigerator for up to a week.
