1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

3 celery stalks, sliced

6 cups chicken broth

1 teaspoon dried thyme

1 bay leaf

4 cups cooked shredded chicken (about 2 boneless, skinless chicken breasts)

2 cups frozen peas

Salt and pepper to taste

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup milk

1/4 cup unsalted butter, melted

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent, about 3-4 minutes. Then add the sliced carrots and celery, cooking for another 5 minutes.

    Add Broth and Seasoning: Pour in the chicken broth, and stir in the dried thyme and bay leaf. Increase the heat to high and bring the mixture to a boil.

      Incorporate Chicken and Peas: Once boiling, reduce the heat to low and add in the shredded chicken and frozen peas. Season with salt and pepper. Let it simmer gently while you prepare the dumplings.

        Make Dumpling Batter: In a mixing bowl, combine the flour, baking powder, 1/2 teaspoon salt, and black pepper. In a separate bowl, mix the milk and melted butter together. Pour the wet ingredients into the dry ingredients, gently combining until just blended. The batter will be thick.
