8 oz elbow macaroni

2 cups fresh broccoli florets

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon mustard powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

2 tablespoons grated Parmesan cheese (optional for topping)

Instructions
 

Cook the Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. About 2 minutes before the pasta is done, add the broccoli florets to the pot. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Stir constantly for about 2 minutes until it turns golden and bubbly.

      Add Milk: Gradually whisk in the whole milk, ensuring no lumps form. Continue to stir until the mixture thickens and starts to bubble, about 5-7 minutes.

        Cheese It Up: Remove the saucepan from heat and add the shredded cheddar and mozzarella cheeses. Stir until melted and smooth. Mix in the garlic powder, onion powder, mustard powder, salt, and pepper.

          Combine with Pasta and Broccoli: In a large mixing bowl, combine the drained macaroni and broccoli with the cheese sauce. Stir well to coat all the ingredients.

            Prepare for Baking (optional): If desired, transfer the mixture to a greased 9x13-inch baking dish. In a small bowl, mix the breadcrumbs with the grated Parmesan cheese, then sprinkle the mixture evenly over the macaroni and cheese.
