Ingredients

For the Meatloaf:

1 ½ pounds ground beef (80/20 blend preferred)

1 cup breadcrumbs (preferably panko)

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg

1/4 cup milk

1/4 cup ketchup (plus extra for the topping)

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika (optional)

For the Mashed Potatoes:

2 pounds russet potatoes, peeled and cubed

1/2 cup unsalted butter

1/2 cup whole milk (or more for desired creaminess)

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped onion, minced garlic, egg, milk, ketchup, Worcestershire sauce, thyme, oregano, salt, pepper, and smoked paprika. Mix until just combined; do not overmix to keep the meatloaf tender.

Shape the Meatloaf: Transfer the mixture to a lightly greased loaf pan or shape it into a loaf on a lined baking tray. Spread a layer of ketchup on top for added flavor and moisture.

Bake the Meatloaf: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).

Cook the Potatoes: While the meatloaf is baking, place the cubed potatoes in a large pot and cover them with cold salted water. Bring to a boil, then reduce the heat and let simmer for about 15-20 minutes until the potatoes are fork-tender.

Mash the Potatoes: Drain the potatoes and return them to the pot. Add the butter and milk, and mash them to your desired consistency. Season with salt and pepper to taste. For extra creaminess, stir in more milk as needed.

Serve: Once the meatloaf is cooked, remove it from the oven and let it rest for about 10 minutes before slicing. Serve slices of the meatloaf alongside a generous scoop of creamy mashed potatoes, garnished with chopped chives or parsley.
