1 pound Brussels sprouts, trimmed and halved

2 tablespoons olive oil

1/4 cup balsamic vinegar

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon Dijon mustard

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Prepare the Brussels sprouts: In a large mixing bowl, combine the halved Brussels sprouts with olive oil, salt, and pepper. Toss until they are evenly coated.

      Arrange on a baking sheet: Spread the Brussels sprouts in a single layer on a baking sheet lined with parchment paper or lightly greased.

        Roast in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through for even cooking.

          Make the glaze: While the Brussels sprouts are roasting, whisk together balsamic vinegar, honey, minced garlic, Dijon mustard, and red pepper flakes (if using) in a small saucepan over medium heat. Allow it to simmer for 3-5 minutes, or until it thickens slightly.

            Combine and coat: Once the Brussels sprouts are roasted to your liking, remove them from the oven and drizzle the balsamic-honey glaze over them. Toss gently to coat all the sprouts evenly.
