1 lb (450g) boneless, skinless chicken thighs

3 tbsp honey

3 tbsp soy sauce (low-sodium preferred)

3 cloves garlic, minced

1 tbsp fresh ginger, grated

2 tbsp rice vinegar or apple cider vinegar

2 tbsp sesame oil

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil. Whisk until well mixed. Season the chicken thighs with salt and pepper, then add them to the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.

    Heat the Pan: In a large skillet, heat a drizzle of sesame oil over medium-high heat. Once hot, add the marinated chicken thighs (reserve the marinade) and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

      Create the Sauce: Remove the cooked chicken from the skillet and set aside on a plate. In the same skillet, pour in the reserved marinade and bring to a simmer. Reduce the heat to medium-low and let it simmer for 3-5 minutes until slightly thickened.

        Combine and Serve: Return the chicken to the skillet, coating it generously in the thickened sauce. Allow it to heat through for another 2 minutes.
