Honey Garlic Chicken and Veggie Stir Fry

Ingredients
  

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

1 cup broccoli florets

1 bell pepper (any color), sliced into thin strips

1 cup snap peas, trimmed

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 cup honey

1/4 cup soy sauce (low-sodium, if preferred)

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

Sesame seeds, for garnish

Chopped green onions, for garnish (optional)

Cooked rice or noodles, for serving

Instructions
 

Prep the Sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, ginger, salt, and pepper. Set aside.

    Cook the Chicken: Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat. Add the chicken pieces and stir-fry for about 5-7 minutes until fully cooked and golden brown. Remove from the pan and set aside.

      Sauté Vegetables: In the same pan, add the remaining tablespoon of olive oil. Add broccoli florets, bell pepper strips, and snap peas. Stir-fry the veggies for about 4-5 minutes until they are crisp-tender.

        Combine Chicken and Sauce: Return the cooked chicken to the pan with the vegetables. Pour the honey-soy mixture over the chicken and veggies, stirring well to combine.

          Thicken the Sauce: Bring the stir fry to a gentle simmer. Add the cornstarch and water mixture to the pan, stirring continuously until the sauce thickens (about 1-2 minutes).
