Honey Garlic Glazed Carrots

1 lb (450g) baby carrots (or regular carrots, peeled and sliced)

2 tablespoons unsalted butter

3 tablespoons honey

2-3 cloves garlic, minced

1 tablespoon soy sauce

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Carrots: If using regular carrots, slice them into uniform pieces, about 1/4 inch thick. If using baby carrots, you can leave them whole or halve them lengthwise.

    Blanch the Carrots: In a large pot, bring salted water to a boil. Add the carrots and cook for about 4-5 minutes, until slightly tender but still crisp. Drain the carrots and set them aside.

      Make the Glaze: In a large skillet over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1 minute or until fragrant, being careful not to burn it.

        Combine Ingredients: Add honey and soy sauce to the skillet, stirring to combine. Allow the mixture to simmer for about 1-2 minutes.

          Glaze the Carrots: Carefully add the blanched carrots to the skillet, tossing them in the honey garlic glaze. Cook for an additional 3-4 minutes, stirring occasionally, until the carrots are glazed and heated through.

            Season: Season the dish with salt and pepper to taste. Toss again to ensure even coating.
