1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup honey

1/4 cup soy sauce (low sodium preferred)

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon ground ginger

1 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon red pepper flakes (optional, for heat)

Fresh green onions, chopped (for garnish)

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes before use)

Instructions
 

Prepare the Marinade: In a medium mixing bowl, combine the honey, soy sauce, minced garlic, olive oil, apple cider vinegar, ground ginger, black pepper, salt, and red pepper flakes (if using). Whisk everything together until well combined.

    Marinate the Chicken: Place the cubed chicken into a large resealable plastic bag or a large bowl. Pour the marinade over the chicken, making sure it's well coated. Seal the bag or cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 2 hours (or overnight for maximum flavor).

      Preheat the Grill: Heat your grill to medium-high heat (around 400°F/200°C) and lightly oil the grill grates to prevent sticking.

        Assemble the Skewers: Remove the marinated chicken from the fridge and thread the cubes onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 5-7 minutes per side, turning occasionally, until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (75°C).
