Honey Garlic Pork Chops with Potatoes

For the Honey Garlic Pork Chops:

4 boneless pork chops (about 1 inch thick)

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon ground ginger

Salt and pepper to taste

1 tablespoon olive oil (for frying)

Fresh parsley for garnish (optional)

For the Crispy Potatoes:

1.5 lbs baby potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh rosemary, chopped (optional)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, combine the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss well to coat.

        - Spread the potatoes out in a single layer on a baking sheet lined with parchment paper. Roast for 25-30 minutes, or until golden and crispy, flipping halfway through for even cooking.

          Make the Honey Garlic Marinade:

            - In a small bowl, whisk together the honey, soy sauce, minced garlic, Dijon mustard, and ground ginger. Set aside.

              Cook the Pork Chops:

                - Season both sides of the pork chops with salt and pepper.

                  - Heat a tablespoon of olive oil in a large skillet over medium-high heat.

                    - When the oil is hot, add the pork chops to the skillet. Cook for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

                      - Once the pork chops are almost done, pour the honey garlic marinade over them. Let it simmer for 1-2 minutes until slightly thickened and the pork is coated in the sauce.

                        Serve:

                          - Remove the pork chops from the skillet and let them rest for a couple of minutes.

                            - Serve the pork chops hot, drizzled with the honey garlic sauce, alongside the crispy potatoes. Garnish with fresh parsley and rosemary if desired.
