Honey Garlic Pork Tenderloin

1 ½ lbs pork tenderloin

1/4 cup honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 teaspoon fresh ginger, grated

1 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Optional: sesame seeds (for garnish)

Instructions
 

Marinate the Pork: In a bowl, whisk together honey, minced garlic, soy sauce, Dijon mustard, olive oil, grated ginger, black pepper, salt, and apple cider vinegar until well combined. Place the pork tenderloin in a resealable plastic bag or a shallow dish and pour the marinade over it, making sure it coats the pork evenly. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Pork: In a large, oven-safe skillet, heat a little olive oil over medium-high heat. Remove the pork tenderloin from the marinade (reserve the marinade for later) and sear it in the hot skillet for about 3-4 minutes on each side, until it develops a nice golden brown crust.

        Bake the Pork: Once seared, pour the reserved marinade over the pork in the skillet. Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

          Rest the Pork: Once cooked, remove the pork from the oven and let it rest in the skillet covered loosely with foil for about 5-10 minutes to allow the juices to redistribute.

            Slice and Serve: Slice the pork tenderloin into medallions and drizzle the pan sauce over the top. Garnish with chopped parsley and, if desired, a sprinkle of sesame seeds. Serve with your choice of sides, such as steamed vegetables or rice.
