Honey Garlic Shrimp Tacos with Summer Slaw

For the Shrimp:

1 lb large shrimp, peeled and deveined

1/4 cup honey

2 tbsp soy sauce

2 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tbsp lime juice

1 tbsp sesame oil

Salt and pepper to taste

1 tbsp sesame seeds (for garnish)

For the Summer Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, grated

1/2 cup red bell pepper, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup apple cider vinegar

2 tbsp olive oil

1 tbsp honey

Salt and pepper to taste

For the Tacos:

8 small corn or flour tortillas

Lime wedges (for serving)

Extra cilantro (for garnish)

Marinate the Shrimp: In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, lime juice, sesame oil, salt, and pepper. Add the shrimp and toss to coat evenly. Cover and refrigerate for 15-30 minutes to marinate.

    Prepare the Summer Slaw: In a large bowl, combine the green cabbage, red cabbage, grated carrots, red bell pepper, and cilantro. In a small bowl, whisk together apple cider vinegar, olive oil, honey, salt, and pepper. Pour the dressing over the slaw and toss to combine. Set aside to let the flavors meld while you cook the shrimp.

      Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Sprinkle sesame seeds over the cooked shrimp and remove from heat.

        Warm the Tortillas: In a separate skillet or grill, warm the tortillas over medium heat for about 30 seconds on each side until they are pliable.
