Ingredients

3 cups of fresh or frozen corn kernels

1 cup of heavy cream

1/4 cup of unsalted butter, melted

1/4 cup of honey

1 large egg

1 cup of all-purpose flour

1 teaspoon of baking powder

1/2 teaspoon of salt

1/2 teaspoon of black pepper

1/2 cup of shredded cheddar cheese (optional)

1/4 cup of chopped fresh chives for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish with non-stick spray or butter.

Mix Wet Ingredients: In a large mixing bowl, combine the corn kernels, heavy cream, melted butter, honey, and egg. Whisk until well combined.

Incorporate Dry Ingredients: In a separate bowl, sift together the flour, baking powder, salt, and black pepper. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined.

Add Cheese: If you’re using cheese, fold in the shredded cheddar gently into the mixture to distribute evenly.

Transfer to Baking Dish: Pour the corn mixture into the prepared baking dish. Spread it out evenly with a spatula.

Bake: Place the dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Garnish: Once baked, remove the casserole from the oven and let it cool for about 10 minutes. Garnish with chopped fresh chives before serving.

Serve: Cut the casserole into squares and serve warm as a side dish or a main vegetarian meal.
