Honey Glazed Meatball and Veggie Skewers

For the Meatballs:

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 tsp Italian seasoning

Salt and pepper to taste

For the Honey Glaze:

1/2 cup honey

3 tbsp soy sauce

1 tbsp apple cider vinegar

1 tsp ground ginger

1/2 tsp red pepper flakes (optional for a spicy kick)

For the Veggies:

1 bell pepper (any color), cut into bite-sized pieces

1 zucchini, sliced into thick rounds

1 red onion, cut into wedges

8 cherry tomatoes

Olive oil, for drizzling

Prep the Meatballs:

    - In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, onion, garlic, egg, Italian seasoning, and a pinch of salt and pepper.

      - Mix until just combined, being careful not to overwork the meat.

        Form the Meatballs:

          - Shape the mixture into evenly sized meatballs, about 1 inch in diameter. You should get approximately 20 meatballs.

            Prepare the Honey Glaze:

              - In a small saucepan, combine honey, soy sauce, apple cider vinegar, ground ginger, and red pepper flakes.

                - Heat over low to medium heat, stirring until it comes to a gentle simmer. Remove from heat and set aside.

                  Cook the Meatballs:

                    - Preheat your grill or grill pan over medium heat.

                      - Thread the meatballs onto skewers, leaving a little space between each one for even cooking.

                        - Grill the meatballs for about 10-12 minutes, turning occasionally until they are cooked through and have a nice char.

                          Prep the Veggies:

                            - While the meatballs are grilling, thread the bell pepper, zucchini, red onion, and cherry tomatoes onto separate skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning).
