For the Muffin Batter:

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 tablespoon honey

1/4 cup chopped pecans

For the Topping:

1/4 cup chopped pecans

2 tablespoons honey

1 tablespoon butter, melted

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

      Prepare the Muffin Batter:

        In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, combine the granulated sugar, brown sugar, and melted butter. Beat in the eggs, one at a time, adding the vanilla extract and buttermilk. Gradually fold the dry ingredients into the wet mixture until just combined.

          Make the Cheesecake Filling:

            In a separate bowl, beat together the softened cream cheese, granulated sugar, egg, vanilla extract, and honey until smooth. Fold in the chopped pecans gently.

              Assemble the Muffins:

                Fill each muffin liner about 1/3 full with the muffin batter. Next, spoon about 1 tablespoon of the cheesecake filling into the center of each muffin. Top with another scoop of muffin batter until the liners are about 2/3 full.

                  Prepare the Topping:

                    In a small bowl, combine the chopped pecans, honey, and melted butter. Mix well.

                      Bake the Muffins:

                        Sprinkle the topping evenly over each muffin. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the muffin portion comes out clean. The cheesecake filling may still be slightly gooey, which is perfect!

                          Cool and Enjoy:

                            Allow the muffins to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.
