Honey Pepper Chicken Mac and Cheese

2 cups elbow macaroni

2 cups cooked chicken breast, diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon black pepper

1/2 teaspoon salt

1/4 cup honey

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese

2 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the elbow macaroni in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

    In a large skillet, heat olive oil over medium heat. Add the diced chicken, smoked paprika, black pepper, and salt. Sauté for about 5 minutes or until the chicken is heated through and seasoned well.

      In a separate pot, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for about 2 minutes until lightly golden.

        Gradually whisk in the milk to the roux, ensuring there are no lumps. Continue stirring over medium heat until the mixture thickens, about 5-7 minutes.

          Add the cream cheese to the mixture, stirring until melted and smooth. Then, lower the heat and stir in the cheddar and mozzarella cheeses until completely melted.

            Once the cheese sauce is smooth, add the honey and mix well. Taste and adjust seasoning if necessary.

              Combine the cooked macaroni, seasoned chicken, and cheese sauce in a large baking dish. Stir until everything is evenly coated.

                Optional: For a crunchy topping, you can add breadcrumbs mixed with a little melted butter on top.
