Honey Sriracha Chicken Skewers

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup honey

1/4 cup Sriracha sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 garlic cloves, minced

1 teaspoon ground ginger (or 1 tablespoon fresh ginger, minced)

1 tablespoon sesame oil

Salt and pepper to taste

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the honey, Sriracha sauce, soy sauce, rice vinegar, minced garlic, ground ginger, sesame oil, salt, and pepper until well combined.

    Marinate the Chicken: Add the chicken cubes to the marinade, making sure each piece is coated well. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375°F/190°C). If using a grill pan, heat it over medium-high on the stovetop.

        Skewer the Chicken: Remove the chicken from the marinade and thread the pieces onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the grill (or grill pan) and cook for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 165°F (75°C).

            Baste with Remaining Marinade: During the last few minutes of grilling, brush the skewers with some of the leftover marinade for extra flavor (make sure it's not used raw).

              Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve them warm with extra Sriracha sauce on the side and garnished with chopped green onions or sesame seeds if desired.
