1 lb baby carrots (or sliced regular carrots)

3 tablespoons unsalted butter

2 tablespoons honey

1 tablespoon hot sauce (adjust to taste)

1 teaspoon sea salt

1 teaspoon ground black pepper

½ teaspoon smoked paprika

Fresh thyme leaves (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Carrots: If using regular carrots, peel and slice them into even sticks. If using baby carrots, leave them whole. Place the carrots in a mixing bowl.

      Make the Hot Honey Butter: In a small saucepan over low heat, melt the unsalted butter. Once melted, stir in the honey and hot sauce until well combined. Remove from heat.

        Season the Carrots: Pour the hot honey butter mixture over the carrots. Sprinkle with sea salt, black pepper, and smoked paprika. Toss everything together until the carrots are evenly coated.

          Roast the Carrots: Transfer the coated carrots to the prepared baking sheet, spreading them out in a single layer for even roasting. Bake in the preheated oven for 20-25 minutes or until the carrots are tender and caramelized, stirring once halfway through.
