Ingredients

For the Chicken:

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1/4 cup buttermilk

Vegetable oil for frying

For the Hot Honey Sauce:

1/3 cup honey

1-2 tsp red pepper flakes (adjust according to spice preference)

1 tbsp apple cider vinegar

1 tsp soy sauce

For the Bowls:

2 cups cooked jasmine or brown rice

1 cup steamed broccoli florets

1 carrot, julienned

1 red bell pepper, sliced

1 avocado, sliced

Sesame seeds for garnish

Fresh cilantro or green onions for garnish

Lime wedges for serving

Instructions

Prepare the Chicken:

    - In a medium bowl, combine the flour, garlic powder, paprika, salt, and black pepper. In another bowl, pour the buttermilk.

      - Dip the chicken pieces into the buttermilk, allowing excess to drip off, then coat them in the seasoned flour mixture. Set aside to rest.

        Cook the Chicken:

          - In a deep skillet, heat about 1 inch of vegetable oil over medium-high heat until hot (around 350°F/175°C).

            - Fry the chicken in batches, ensuring not to overcrowd the pan. Cook for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a plate lined with paper towels to absorb excess oil.

              Make the Hot Honey Sauce:

                - In a small saucepan over low heat, combine the honey, red pepper flakes, apple cider vinegar, and soy sauce. Stir until smooth and warmed through. Adjust the heat by adding more red pepper flakes if necessary.

                  Assemble the Bowls:

                    - In serving bowls, layer the rice as the base, followed by the steamed broccoli, julienned carrot, sliced bell pepper, and avocado.

                      - Arrange the crispy chicken on top and drizzle generously with the hot honey sauce.

                        Garnish and Serve:

                          - Sprinkle with sesame seeds and cilantro or green onions for a fresh touch. Serve with lime wedges on the side for an extra zing!
