1.5 lbs (680g) boneless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

4 cloves garlic, minced

1-inch piece fresh ginger, grated

½ cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey

1 teaspoon sesame oil

½ teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Steamed jasmine rice (to serve)

Instructions
 

Marinate the Chicken:

    In a medium bowl, combine the sweet chili sauce, soy sauce, rice vinegar, honey, sesame oil, and red pepper flakes. Add a generous pinch of salt and pepper. Mix well. Toss the chicken pieces in this marinade and let them sit for at least 30 minutes, or refrigerate for up to 2 hours for more flavor.

      Sauté the Aromatics:
